Note: Store in the refrigerator, and it should stay fresh for up to a month.
Ingredients (for 2kg of apples)
- 2 tbsp achaar masala
- ¼ cup mustard oil
- 1 heaped tbsp hot chili powder
- 1 level tbsp salt
- 4 tbsp white vinegar

Steps
- Prep the Apples: Start by washing and thoroughly drying the green apples. Make sure there’s no moisture left. Slice the apples into thin slices—thinner slices absorb more flavor, so the thinner, the better!
- Make the Achaar Mixture: In a dish, combine the achaar masala, mustard oil, chili powder, salt, and white vinegar. Stir everything together well and let the mixture sit for a few minutes to allow the flavors to meld.
- Mix with Apples: After resting the achaar mixture, give it another good stir and pour it over the sliced apples. Toss everything together, ensuring the apples are evenly coated.
- Adjust Seasoning: Taste and adjust the salt and chili levels according to your preference. If you like it hotter, add more chili powder. If it’s too spicy or salty, don’t worry—keep reading for a fix!
Tips for the Perfect Achaar
- Vinegar: The vinegar helps preserve the apples while keeping them crunchy and balances the heat. If your achaar turns out too spicy, adding a bit more vinegar can help cool things down.
- Too Salty?: If you find your achaar is too salty, you can adjust it by adding a bit of aamchur powder (dry mango powder) or even some fresh lime or lemon juice for a tangy touch.
This Green Apple Achaar is the perfect blend of tangy, spicy, and crunchy! Whether you’re serving it at a big function or just enjoying it at home, it’s sure to bring a fiery kick to any meal.
