- Whole duck, cut into curry pieces (remove all skin and fat if you prefer)
- Oil (a generous amount, e,g ¼ cup oil)
- Whole spices: (1 tbsp) cumin, (
½tbsp) fenugreek, (1 tbsp)mustard seeds, (10-12) Curry Leaves - 1 minced onion
- 2 tbsp minced garlic
- 1 tbsp minced ginger
- 2 tbsp chilli powder
- 1 tbsp garam masala
- 3 tbsp curry masala
- 1 tsp turmeric powder
- Coriander – garnish (optional)
- Salt to taste

- Prepare the Masala Base:
In a thick-based pot, heat a generous amount of oil over medium heat. Add the whole spices—cumin, fenugreek, curry leaves, and mustard seeds—allowing them to sizzle and release their aroma. Add the minced onions, garlic, and ginger. Fry until golden brown. - Add the Spices:
Once the onions are well-browned, add the chilli powder, garam masala, curry masala, turmeric, and salt. Fry the spices until they form a thick paste. If the mixture starts sticking to the pot, add a little water to loosen it up and free all the masala from the base. - Cook the Duck:
Add the well-washed and drained duck pieces into the pot. Stir and fry the duck for a good 5 minutes (high heat), making sure it’s coated well with the masala. - Slow Cook:
Lower the heat to very low and cover the pot. Let the duck cook slowly, stirring occasionally, until the meat is tender and soft. This could take some time depending on the size of the pieces, so be patient. - Final Adjustments:
Taste the curry and adjust the salt or spice levels if necessary. Feel free to add some fresh coriander for an extra burst of flavour.
